It is the Beef on Weck sandwich, almost impossible to find except in the Buffalo area. "Charlie The Butcher" has earned a long reputation as the star of Beef on Weck creations.
What exactly is a Weck you ask? It's a nicknme for the Kummelweck bun, which is similar to a Kaiser Roll, but is sprinkled with kosher saly and a touch of caraway seeds. The bun is served warm and is piled high with sliced beef (like prime rib or roast beef) that has been seasoned and marinated for hours. Then you top the meat off with au jus and horseradish sauce.
As you can probably guess this is one sloppy sandwich. Be prepared with lot's of napkins and watch veteran beef on weck eaters for the art of eating this sandwich without sacrificing the clothes you are wearing.
